My Reviews of this recipe

As my birthday weekend rolled in, I decided to host an intimate dinner with my friends and family. I wanted it to be memorable and extra in creating a festive feeling. I set up vibrant decorations, cheerful music, and delicious food. I planned a pizza birthday night and had the pleasure of baking a Potato Pizza myself because all the ingredients were just around the corner of my kitchen. Making it from scratch is a rewarding experience.

Potato Pizza Ingredients

  • Thinly sliced potatoes (Russet potato)
  • Sea salt
  • Olive oil
  • Mozzarella cheese
  • Fresh rosemary

Homemade Pizza Dough Ingredients

  • Flour: 2 ½ to 3 cups all-purpose flour
  • Yeast: 1 packet (2 ¼ teaspoons) active dry yeast or instant yeast
  • Water: 1 cup warm water about 110°F or 43°C
  • Sugar: 1 teaspoon sugar to help activate the yeast
  • Salt: 1 teaspoon salt
  • Olive oil: 1 tablespoon olive oil for greasing

I start by preparing the homemade pizza dough, mixing flour, yeast, a pinch of salt, and water and resting it before I stretch the dough forming it into a perfect circle. On the other hand, I thinly sliced the potatoes and soaked them in cold water after adding salt. I layered the potato slice, sprinkled rosemary, drizzled olive oil, and added mozzarella cheese as I anticipated a cheesy version. Then I preheat the oven to 200˚C, slipped the pizza into the oven, and the kitchen filled with the scent of the baking dough and the sound of the roasting potatoes baked to perfection.

Then comes the best part: gathering around the table and sharing it with my friends and family. The first thing that hits me is the smell of earthy potatoes and rosemary. As I slice the pizza, I can feel the tender, perfectly cooked potatoes layered beneath the dough, and with each pull, there’s a delightful stretch of mozzarella and satisfying crunch. The first bite is pure bliss, a combination of flavors dances in my mouth, with the crispy crust giving way to the tender potatoes and cheesy mozzarella. I love how the natural flavors shine and the simplicity of the ingredients showcasing each component to play its part beautifully both comforting and indulging. The best aspect of potatoes is their versatility, they adapt so well to various flavors and textures. The natural sweetness of potatoes pairs wonderfully with cheese and the rosemary adds an aromatic flavor that elevates the potato to another level and makes it a hit for me and everybody.

A heart shaped potato

My last recipe review

Last summer, my husband and I traveled from Revelstoke to Kelowna. As we drove through the stunning countryside, we decided to stop at a charming restaurant for a light lunch. The sun glows, and the atmosphere is perfect for a little break. Upon checking the menu, I couldn’t help but reminisce about home in the Philippines, where my family often enjoys potatoes as a typical afternoon snack. It brought back memories of cozy afternoons, sharing simple yet delicious dishes. At the restaurant, I decided to try their classic potato pizza. When the pizza arrived, it was beautifully presented golden-brown crust topped with thinly sliced potatoes, drizzled with olive oil, and garnished with fresh rosemary and I was reminded of my family's love for potatoes. It highlighted the natural flavors of the ingredients without being overly complicated. The potatoes were tender absorbing the olive oil while rosemary added a balance and the textures of crunchy crust, creamy potatoes, and aromatic herbs created a satisfying mouthfeel that kept me coming back for more. I savored each slice of the potato pizza I also appreciated the attention to detail in the preparation. That afternoon became more than just a meal It reminded me of how food can remind memories and feelings, connecting us to our roots even when we’re far from home.
